Today, food valorization represents an important challenge to environmental sustainability. Food waste can be used as a substrate for single cell protein production suitable animal feed. In this study, and agricultural waste, represented by fish, pineapple, banana, apple, citrus peels, have been simultaneously fermentation Saccharomyces cerevisiae, evaluate the possibility of using multi complex simultaneous biovalorization different waste. The process was implemented supplementation hydrolytic enzyme nutrient allow best yeast growing conditions. At end process, final enriched in protein, reaching up 40.19% making multisubstrate useful also investigated crude lipid, ash, lignin, soluble insoluble sugar. composition at 14.46% 1.08% 6.29% lignin.
